Storing Evercrisp Under CA and DCA

The ability of Evercrisp apple fruit to tolerate a range of oxygen levels (0.6,, 0.9, 1.5, 3.0 and 21%) in combination with 0.5, 1.5, and 3% CO2 was described. Generally, Evercrisp storability was enhanced by the higher levels of CO2, especially in combination with low levels of O2 after 6 months storage. There was a dramatic, 4- to 5-fold difference in the sensitivity of Evercrisp to internal browning between orchards, with the highest rate of disorder incidence of 60% in one orchard. Air storage little to no internal browning, but the fruit were overripe and greasy. The most beneficial combination of O2 and CO2 was 0.6 to 0.9 % O2 in combination with 3% CO2. The benefits for longer storage durations needs to be assessed.
