Recipe: Kale and Fruit Slaw
This slaw is full of five different types of fruit!
Number of Servings: 50 8oz. servings
Ingredients
- 6 pounds + 4 ounces shredded kale
- 3 pounds + 2 ounces quartered and cored and sliced apples
- 3 pounds + 2 ounces trimmed and sliced into ¼ inch pieces cantaloupe
- 3 pounds + 2 ounces fresh blueberries
- 4 pounds + 11 ounces trimmed and sliced strawberries
- 3 pounds + 2 ounces halved white seedless grapes
- 3 pounds + 2 ounces blood orange vinaigrette dressing
- 1 pound 9 ounces toasted sliced almonds
- 3 ¼ cups roasted and salted sunflower seeds
Instructions
To prepare one ala carte portion:
Place 2 ounces of kale in a stainless-steel mixing bowl. Add 1 ounce each of apples, cantaloupe, blueberries and grape to the kale. Add 1½ ounces strawberries. Drizzle 1½ ounces blood orange vinaigrette dressing over the salad mixture. Toss together until blended.
Place in a chilled salad bowl. Sprinkle ½ ounce almonds and 1 tablespoon sunflower seeds over the salad.
