Dr. Eustice is a Professor of Practice, Academic Advisor, and Internship Coordinator within the Department of Community Sustainability for Sustainable Parks, Recreation, & Tourism (SPRT) students in the Department of Community Sustainability.

Teaching

Her teaching assignment includes instruction of CSUS 200 (Introduction to Sustainability), CSUS 273 (Introduction to Travel and Tourism), CSUS 301 (Community Engagement for Sustainability), CSUS 310 (History of Environmental Thought and Sustainability), CSUS 490 (Independent Study), CSUS 493 (Professional Internship), and ANR 310 (Integrated Learning Seminar).

Research

As an interdisciplinary researcher, her interests and projects span applied research in parks and recreation, sustainable tourism, local and regional food systems, as well as research focused on the Scholarship of Teaching and Learning (SoTL). Her SoTL work largely aims to address the need of evidence based, dynamic, and ever evolving practices in pedagogical approaches.
