Biography

Bradley Marks is department chair and professor, with degrees from MSU and Purdue, and prior faculty experience at the University of Arkansas. His interdisciplinary work spans food engineering and microbiology, supported by extensive federal and industry funding. Marks leads research on food safety engineering, particularly modeling microbial behavior and validating pathogen control processes. His overarching goal is to improve the design and operation of manufacturing systems for ready‑to‑eat foods, with a primary emphasis on enhancing microbial safety. Marks is a Fellow of the American Society of Agricultural and Biological Engineers.

Research Interests

  • Food engineering. The overall goal is to develop improved methods for design and operation of manufacturing systems for ready-to-eat food products, with a primary emphasis on improved microbial safety.  Current research focuses on modeling microbial inactivation, transport, survival, and growth for critical foodborne pathogens and products (e.g., Salmonella in low-moisture foods, E. coli O157:H7 on fresh produce, Salmonella in meat and poultry products).
