José Hernández is an international student from the Dominican Republic who was awarded a Fulbright Scholarship by the U.S. Department of State. His research aims to develop new food alternatives to enhance people’s health and meet their needs. During his Master's program, his research will focus on developing lectin-free bean flour from popping beans.
