Background and Research Interests
Lauren joined the Department of Food Science and Human Nutrition in the Summer of 2024 after receiving a B.S. in Chemistry and B.A. in Spanish Language and Literatures from Binghamton University in May of 2024. Lauren is studying the fatty acids, minerals, vitamins and polyphenols of beef from cattle fed grass-finished diet variations to understand how production and feeding practices translate to its nutrient density. By developing the grass-finished beef database, her research will help define the optimal nutritional profile of beef for human consumption, inform farmers with feeding recommendations that improve product quality and finances, and set standards for the "grass-finished" label.
