Mariano is currently pursuing a Ph.D. in Food Science at Michigan State University. He holds a bachelor’s degree in Food Science and Technology from Zamorano University. His research focuses on pulse varieties and processing methods to enhance flavor, as well as functionality for consumer acceptance and market viability.
