Lecture Title: “Vitamin A and Immunity: Looking Back and Looking Forward"
Catharine (Cathy) Ross received her undergraduate education at the University of California at Davis (zoology), and masters in nutrition (M.N.S.) and Ph.D. in biochemistry, molecular and cell biology from Cornell University, Ithaca, NY. She was a postdoctoral trainee in the Department of Medicine, Columbia University. She began her independent research at the Medical College of Pennsylvania in 1978, where she was promoted to professor in 1991. She then moved to the Pennsylvania State University, where she served on the faculty for 28 years; she retired in 2022 as Professor Emerita of Nutritional Sciences and Physiology, and occupant (emerita) of the Dorothy Foehr Huck Chair from the Department of Nutritional Sciences. She then moved to College Station, Texas in 2023 where she is currently a University Distinguished Professor in the Department of Nutrition, Texas A&M University. She also serves as Associate Dean for Faculty Affairs in the College of Agriculture and Life Sciences. She has conducted research on lipid and vitamin A nutrition and metabolism and on nutrition and immune function for four decades. She served for 10 years as Editor-in-Chief of The Journal of Nutrition and as Sr. Editor for Modern Nutrition in Health and Disease (11th ed) and Editor for the 9th, 10th, and 12th editions. She is an elected Fellow of the American Association for the Advancement of Science, Distinguished Fellow of the American Society for Nutrition, member of the National Academy of Science (USA). She has served on the Food Advisory Committee of the FDA, the Food and Nutrition Board of NASEM, and the Board of Scientific Counselors for NIH NIDDK.
